Vineyard & Winemaking Notes

As is tradition, Sei Amici Lambrusco is “vini frizzante”, a slightly effervescent wine that is refreshing, light, and lively. These traditional Lambrusco’s are harvested mid September. The grapes are de-stemmed, pressed and the must separated from the seeds and stems. The initial fermentation is quite traditional; the must goes into vertical stainless steel tanks where yeast convert the sugars to alcohol, and the fermented wine macerates on the skins. The wine is then filtered and a second lot of must is added. The added must provides more sugar that becomes available for fermentation to resume thus allowing the wine to become frizzante. It is then filtered, bottled.
