Lagosta comes from the Vinho Verde wine region from the Devesa Estate. Lagosta is produced from the Azal, Arinto, Loureiro and Trajadura grape varieties traditionally used in Vinho Verde. The Region of Vinho Verde is located in the northwest of Portugal in an area traditionally known as Entre-Douro-e-Minho. Its limits are the Minha River in the North (border with Galicia) and mountainous areas in the East and South, forming the natural border between the Atlantic Ocean, Entre-Douro-eMinha, and the inland regions. The result is a natural amphitheater rising gradually from the maritime border to the inland (Amorim Girao). Winds from the Atlantic Oceans are guided into the region through the main river valleys. Once the grapes are harvested, they go through a process called dessulifitador. Dessulifitador consists of freezing the must right after the harvest and unfreezing it for each bottling. This process ensures the freshness of the wine.
