Riesling: Perfect with mild seafood, roasted turkey and spicy Asian cuisine.
Riesling Kabinett: Perfect with sautéed scallops, spicy foods and desserts.
The grapes are hand harvested at optimal ripeness in compliance with VDP standards. The Grapes are then gently pressed and cool fermented at 14?C – 16?C. Fendel is a modern day winery with 2,500 liter stainless tanks. The tanks were custom built in the underground cellar which maintains a natural temperature of 15?C – 20?C year round.
The Verband Deutscher Prädikats (VDP)
The Organization: The (VDP) is dedicated to making wines of the highest quality. By the end of the 19th century, wine estates had become more conscious of quality. Technological advances and distinction of appellations and origins of the wines led to the formation of the VDP. The association established a system of estate monitoring to ensure and guarantee adherence to the VDP`s standards for high-quality, naturally-produced wines. Today, these 200 members represent approximately three percent of the entire German viticultural area.
Soil: “Soil is a precious, basic asset, whose careful handling lies close to the heart of all VDP members.” The VDP has developed an ecological concept through green, precisely measured organic manuring developing quality wine without compromise.
Vineyard/Vines: “These well-tried varieties have been continuously improved over the centuries, and their yields permanently increased. However, for VDP estates high-yielding clones are of no interest. In choosing their vines, the need for high quality, healthy grapes is decisive… On most estates, the vines are decades old. As the vineyards pass from one generation to another, so does the intimate knowledge of the potential of the individual vines. The crop from the oldest may be minute, but the quality is outstanding.”
The VDP controls all stages of the winemaking process. This includes the care of the soil and the vines, the harvest, the vinification, maturing and the selling of the bottled wine. “Such traditions bring…a duty to protect the regional identity and guarantee a respect for the laws of nature.”
